Knotweed crumble

From the BBC Cornwall pages comes a novel way of commerce with this invasive species:

Harvesting and eating Japanese Knotweed could be the most excellent biological way to control the "nightmare" weed, a lady in Cornwall has said.

Caroline Davey from St Buryan supposed the shoots of the plant, which taste like rhubarb, can be second-hand in jams, chutneys, crumbles, pies and even cocktails.
